Thin Mint Protein Balls
Makes about 10 servings
1 cup pitted Madjool dates
½ cup crispy rice cereal
¼ cup cashew nuts
3 tablespoons EVOLVE® Plant-Based Protein Chocolate
1/8 teaspoon kosher salt
1/8 teaspoon peppermint extract
2 tablespoons mini chocolate chips
In food processor, combine dates and next 5 ingredients. Stir in chocolate chips. Shape into 1 ½-inch balls. Store in air-tight container in refrigerator until ready to use.
