Makes about 15 servings
1 (15-ounce) can no-salt-added black beans, rinsed, drained and patted dry
½ ripened avocado
1 scoop EVOLVE® Plant-Based Protein Chocolate
2½ tablespoons maple syrup
5 tablespoons cocoa powder
1/8 teaspoon ground cinnamon
1/8 teaspoon kosher salt
2 tablespoons coconut oil, divided
6 ounces dark chocolate
Coatings: cocoa powder, desiccated coconut
In food processor, combine beans, next 6 ingredients, and 1½ tablespoons coconut oil and process until smooth. Cover and refrigerate 1 hour.
Shape into 1 ½-inch balls. Refrigerate.
Place chocolate and remaining ½ tablespoon coconut oil in small bowl. Microwave on 50% power 30 seconds and stir. Repeat at 15 second intervals until melted and smooth. Let stand 5 minutes.
Dip balls in melted chocolate, roll in desired topping and place on wax paper-lined baking sheet. Let stand 30 minutes or until chocolate sets.
