Chocolate Chia Pudding

Chia seeds are all the rage, and why not? They are a great source of fiber, protein, and contain omega-3 fatty acids. All while being plant-based.

They can be added to many different types of dishes to help with texture and provide some added nutrition.

This recipe is a dessert or snack really, that uses chia seeds, and only has 5 ingredients! This is a fairly quick and nutritious treat.  Plus, I usually have all of these ingredients on hand – don’t you love it when that happens?

I love the idea of having a rich and chocolatey pudding available for when my body just needs chocolate.  This dessert is loaded with fiber and has some protein in it, so if you asked my husband– “it’s basically a salad.”  He keeps me sane, I tell ya.

All of the ingredients get added to a high powered blender (I use a Vitamix) and blended until smooth.  You can keep some texture if that appeals to you.  Then, you pop it in the fridge until it starts to set.  At least 90 minutes, but I left mine in for 2+ hours.  It keeps fine in the fridge chilled for about 3-4 days.

Chocolate Chia Pudding

Serves 4


  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup chia seeds
  • 1 to 2 tablespoons agave syrup **
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract



  • Place all of the ingredients in blender and blend until smooth.
  • Pour into single serving dishes or medium bowl and place in refrigerator.
  • Cover and let sit in fridge for at least 90 minutes or until is pudding-like in consistency.



** You can also use pitted dates – I used 5 dates in another variation of this recipe.

Toppings: Coconut whip cream, fresh berries, chopped nuts, or all mentioned.
