Apple Pie Overnight Oats
Makes 2 servings
1 medium apple, cored and coarsely chopped
½ cup apple cider
¼ teaspoon ground cinnamon
1 teaspoon lemon juice
1 tablespoon light brown sugar
1/8 teaspoon kosher salt
1 cup old-fashioned oats
2 scoops EVOLVE® Plant-Based Protein Vanilla
1½ cups unsweetened almond milk
¼ cup chopped toasted pecans
Garnish: ground cinnamon
In small saucepan, cook apple and next 5 ingredients, over medium heat. Bring mixture to a boil. Reduce heat and simmer 3 to 5 minutes, or until liquid is absorbed and apples are softened. Cool completely.
In medium bowl, combine oats, protein powder and almond milk, stirring to combine. Stir in apple mixture or spoon over top. Cover and refrigerate 8 hours or up to overnight. Sprinkle with pecans. Garnish, if desired.
